Pancakes are my favourite, but I know they aren’t the most healthy and nutritious. I have made this recipe for a while now and its sooo nice and easy to change up. Your basic pancake is just two ingredients, 2 eggs and 2 bananas. All you need to do is mash the bananas up into a lumpy paste, you will want to keep some lumps in there, gives better flavour throughout the pancake. Then you need to crack the eggs into the bananas and mix it in. For this version I added in a drop of honey to make it taste sweeter. Spoon the mixture into a frying pan with a tablespoon of oil on medium heat. while the bottom cooks place a few strawberries on the top of the mixture, then flip over after about a minute. It is super quick to cook, so its easy to have in the morning before work. After the other side has had about a minute, you’re done! I have added agave maple syrup on top, enjoy!
