Hey lovelies, so I’ve been baking again, ah, I love it. Anyway, I was going to make breakfast muffins but my local shop didn’t have all the stuff I needed so I made mini muffins with cherries and chocolate chips, I guess you could still have them for breakfast but maybe it’d be better for a mid-morning snack.
You will need:
- 1 tsp Baking powder
- 300g Self Raising Flour
- Pinch of salt
- 1 tsp Cinnamon
- 150g Light brown sugar
- 250ml Milk
- 2 eggs
- 100g melted butter
- Small pot of Glace Cherries
- Dark Chocolate Chips
Step 1 – Before you do any mixing, pre-heat the oven to Gas Mark 4 (180 degrees)
Step 2 – In one bowl, put the flour, baking powder, cinnamon, sugar and salt and mix together.
Step 3 – In another bowl put the melted butter, eggs and milk and mix together
Step 4 – Pour the liquid ingredients into the other bowl with the flour and etc in. Mix them together gently but as soon as it’s been poured in, Add in your cherries and chocolate chips or whatever you choose and mix those into it.
Step 5 – Put them into fairy cake cases evenly and put them in the oven for 20 minutes. If you prefer you can use big muffin sized cases as I got 35 out of this because I made small ones, but I’m going to be giving them to friends and family.
Decoration – I wanted them to look a bit more fancy and less plain so I decided to drizzle some icing sugar over the top. For icing sugar it has instructions on the back of the box, so follow them but make it a bit thicker so it doesn’t just melt all over the top.
And ta-daaa! There are your lovely yummy mini muffins, I tried one (the one above) and it tasted amazing while it was still a little warm as it had the chocolate chips melted.
